Rum Buck


  • 45ml dark rum(suggested: Hamilton's 86 Demerara Rum)
  • 7.5ml lime juice
  • 120 - 150ml ginger beer, for topping off
  • allspice dram, for a float (15ml)

Lime wheel


  1. Pour the dark rum and lime juice into a cocktail shaker with ice.

  2. Do a quick shake to mix the ingredients.

  3. Strain into a highball glass with ice.

  4. Top with ginger beer.

  5. Float the allspice dram.

  6. Garnish with a lime wheel.


  1. If you can’t find allspice dram in your area, have a go at making your own. Same goes for the ginger beer!

  2. If a cocktail is served with ice and requires a float, try gently pouring the liquid on top of the ice to facilitate it stacking on top of the drink.
