Raspberry Gin Rickey

Ingredients

  • 45ml gin
  • 15ml lime juice
  • 7 - 10 raspberries
  • 90 - 120ml club soda

Raspberry skewer

Instructions

  1. Add raspberries to a shaker and muddle.

  2. Add gin, lime juice and ice to the shaker.

  3. Shake until chilled.

  4. Strain into a highball glass with ice.

  5. Top with soda.

  6. Garnish with a raspberry skewer.

Trivia

  1. The Rickey was invented by George Williamson in the late 1800s in Washington D.C., at Shoomaker's bar. It's named after Colonel Joe Rickey. The Colonel usually drank bourbon with soda, and at some point, someone suggested to try squeezing a bit of lime juice into the drink.

  2. The Colonel eventually bought the bar in 1883, and people started asking for a "Joe Rickey drink", or a "Joe Rickey".

  3. There are some stories that say that Colonel Rickey eventually grew weary of the fact his biggest claim to fame was the cocktail, and not his actual achievements, like his knowledge and perspicacity in politics or other matters he had generally been known for.
