Pineapple Espresso Tonic

Ingredients

  • 45ml pineapple juice
  • 30ml espresso
  • 120ml tonic water
  • 15ml simple syrup (optional)

Instructions

  1. Add a pineapple juice to a highball glass with crushed ice.

  2. Top off with tonic water.

  3. Add espresso shot.

  4. Mix briefly.

  5. Garnish with a pineapple frond.

Hints

  1. The addition of simple syrup is entirely up to you- tonic water is already pretty sweet. It'll probably come down to how sweet your pineapple juice happens to be!
