Mojito (Simple)

Ingredients

  • 10 - 12 mint leaves
  • 22.5ml simple syrup
  • 22.5ml lime juice
  • 60ml white rum
  • club soda, for topping off

Instructions

  1. Clap mint leaves to release essential oils and add to a highball glass.

  2. Stir mint leaves up and down the glass.

  3. Add the rum, lime juice and simple syrup, along with ice.

  4. Stir until chilled.

  5. Top with soda water.

  6. Garnish with a mint sprig.

Hints

  1. The idea behind stirring the leaves up and down the glass is that we want to coat the glass with the oils from the leaves. The oils contain the aroma and sweetness from the mint.

  2. Note that whenever a recipe calls for mint, it refers to spearmint. It should taste and smell sweet. If it tastes like toothpaste, you're using peppermint.
