Created in the early 2010s by Erick Castro in Polite Provisions, San Diego, the Attorney Privilege takes the base template of an old fashioned and replaces the simple syrup with a heavy helping of orgeat.

Orgeat is a sweet syrup with a distinct almond flavor. Traditionally made from almonds, sugar, and orange flower water, it has a rich, nutty taste with floral undertones. Orgeat syrup is commonly used as an ingredient in cocktails, particularly the classic Mai Tai, providing a delightful almond sweetness and enhancing the overall flavor profile with its aromatic essence. It can also be utilized in non-alcoholic beverages, desserts, and baked goods.

The main ingredient when making orgeat, almond milk is extremely easy to make and can be used in with cereal, tea, and anywhere else where you'd use regular milk.
